Sweet Potato Brownies



Ever since I discovered how easy it is to cook sweet potatoes, they have become a staple part of my diet. First of all, they are so cheap when they are on sale and secondly, they tastes so delicious! They are naturally sweet and loaded with lots of vitamins.  I’m always looking for interesting recipes to try out and when I stumbled across Deliciously Ella’s Recipe for Sweet Potato Brownies, I had to give it a try. I discovered Deliciously Ella’s blog through her inspiring story of how she started her website. Struck with an illness, she decided to change her life by switching her diet to a whole food, plant-based one. Since then, she has seen tremendous improvements and was able to reduce the amount of medication that she had to take.  It’s amazing how the food you intake can really change your body physically and mentally as well.  This is one of the main reasons I try to eat a healthy well-balanced diet. It simple just makes me feel much better and I know it’s beneficial for the future as well. However, I also believe it’s all about balance and you have to sometimes indulge into your cravings. 

Luckily these brownies are actually healthy too! These will not taste like your typical brownies as you can taste the sweet potato and dates but it really satisfies the sweet tooth and chocolate cravings. I really like having these after I’ve put them in the freezer but I’m a bit weird like that and love all frozen fruits too (yes, my teeth can handle it). I find that these brownies are best stored in the fridge after they are made. I also added walnuts to my brownies for some extra texture. Try them out and tell me how they go!

Recipe from Deliciously Ella's blog: 

500g of sweet potatoes (about 2 medium)
12 medjool dates
6 tablespoons of pure maple syrup
100g of ground almonds
2 tablespoons of melted coconut oil
a pinch of salt
100g of ground oats
6 tablespoons of raw cacao powder

Method:

-Pre-heating the oven to 180C 
- Peel the sweet potatoes and cut them into chunks. Place into a steamer for about twenty minutes, until they become really soft.Once they are perfectly soft and beginning to fall apart remove them and add them to a food processor with the pitted dates.
-Put the remaining ingredients into a bowl, before mixing in the sweet potato date combination. Stir well.

-Place into a lined baking dish and cook for about forty-five to fifty minutes, until you can pierce the brownie with a fork and bring it out dry. Remove the tray and allow it to cool for about ten minutes – this is really important as it needs this time to stick together!

  1. That looks like a good alternative to the unhealthy brownie! I love sweet potatoes and dates, so i'm curious how this would taste! it looks yummy in the photo.
